Rubio’s has a new look! Their newly redesigned store in Laguna Niguel is one in 45 that underwent an ocean-inspired transformation. My family and I checked it out, and it looks… Nice. The first thing I noticed was a bench centrally located in the lobby for those ordering To-Go. Everything just seems nicer including woodwork around the salsa bar, more ocean-themed artwork, new delicious lemonades, and a more comfortable, inviting dining room with natural woods. 
There are descriptive wall panels throughout the restaurant detailing the brand’s philosophy which serves as a reminder of the quality ingredients that go into their menu and ocean-awareness. The new redesigned restaurants will also include “Coastal Grill” in their logo. You’ll find their new stores in Mission Viejo, San Clemente, Laguna Niguel, Rancho Santa Margarita, Foothill Ranch and soon many more!
For a limited time, new Tostadas Frescas are available on their menu. They’re served with two tostadas, a side of citrus rice, and black beans. Choose from either pan-seared shrimp, grilled chicken or roasted veggies drizzled with their new lemon white sauce, handmade guacamole, a blend of Spring Mix and Butter Leaf Lettuce and salsa fresca atop a corn tostada shell.
