SuperBowl Recipe: Shrimp Queso Fundido

My favorite part of Super Bowl is grubbing on all the food at the parties! I am always intrigued how creative people get when it comes to food and feeding a large crowd. Pot luck is always best and everyone usually brings a favorite dish to share relieving some of the stress for the host. I’m making a Queso Fundido this year and sharing my recipe below! Something about melted cheese makes everyone want to salivate! It has always been one of my favorite appetizers, and it is such a versatile dish, because you can add any protein to it like shrimp, lobster, and of course classically Chorizo.

SHRIMP QUESO FUNDIDO

Serves 6-8.

INGREDIENTS:

  • 1 lb First Street Brand Shrimp (peeled, deveined, cut in half)
  • 2 tsp old bay seasoning
  • ½ each Yellow Onions (diced)
  • ½ each Shallots (diced)
  • 2 Roma tomatoes (diced)
  • 2 each Garlic (minced)
  • 10 oz frozen spinach (chopped, squeezed dry)
  • 5 oz First Street Brand Mozzarella (shredded)
  • 5 oz First Street Brand Pepper jack (shredded)
  • 5 oz of Oaxaca cheese (shredded)
  • Salt & Pepper A/N
  • Olive Oil A/N
  • Cilantro for garnish
  • Serve with Tortillas or Tortilla Chips

INSTRUCTIONS:

Set oven to broil.

Season shrimp with the old bay seasoning and set aside.

In a small cast iron pan, sauté the onions, shallots till slightly translucent. Add garlic, tomatoes and a pinch of salt and sauté till tomato liquid is dry. Add the shrimp and cook till its slightly pink. Add the spinach and sauté for about 1-2 minutes. Keeping the heat on low, take out 2/3 of the shrimp mixture. In the same pan, layer the shrimp mixture first, then the 3 cheese and repeat, with the shrimp mixture on top being the final layer. Cook until all the cheese has melted. Put in the oven until the top is golden. Serve hot with tortillas or toritilla chips.
